Quick & Easy hummus: A recipe review

The other day I came across this recipe for hummus on Pinterest:

Best Ever 5 minute Microwave Hummus

Now I’ve always wanted to try making my own hummus. I was out of hummus, and TJ’s stopped selling my favorite kind- horseradish!- so I figured it was a perfect time to try out the recipe.

I used a tablespoon of squeezable organic garlic, and just 1 tablespoon of olive oil (the good stuff my dad brings back from Portugal!)

I had to buy Tahini from the grocery store with different cultural foods.

The author of the recipe writes that she could eat this stuff with a spoon. I agree. It’s totally perfect.

I made it in the blender, which was perfect because this made a LOT of hummus! It blended perfectly in like fifteen seconds.

I made it two days ago and it’s more than halfway gone. Mostly consumed by me. Trust me, this stuff is as good as the recipe suggests.

I can’t wait to try it again. I need to experiment with mix-ins now. Where can I find horseradish???

My favorite way of eating it? Power veggie sandwich.

Spread your hummus on Ezekiel bread.

Be very generous. Serving sizes do not apply to homemade items because YOU CHOOSE YOUR SERVING SIZE. Hehe.

Cut up and add your favorite veggies. The more colors, the better. My weapons of choice included fresh spinach, yellow bell pepper, and grape tomatoes. I suggest normal tomatoes because the grape guys will fall out of your sandwich. P.S. I suggest adding avocado as well. When I made this sandwich again, I added some and it made it 100000x better.

Sandwich that baby and enjoy while sitting on the step in the front of your house. It’s a beautiful day. Enjoy it.Winking smile

Fabulous Friday- Pinterest Edition!

Happy Friday everyone! And happy summer to those who (like me) finished up school this week. Helloooo senior year!

 

I have been spending most of my free time on Pinterest lately. Productivity for the win. <—not.

 

Confession: I never pin decorating stuff. I’m too darn lazy to make my space look pretty. But this is EXACTLY what I want my college dorm to look like.

Speaking of college, Marquette has people calling me to answer questions about applying!! Holy cow!! I wasn’t going to start my applications until August! Confession: I spend an embarrassingly large amount of time just looking at college websites.

 

My hair had been feeling super frizzy and all kinds of blah until I came across this pin. Her tips are perfect. I need to put on gel and scrunch my hair BEFORE I EVEN GET OUT OF THE SHOWER. Who knew??

This is the best idea in the history of ever.

I made it this morning with Whole Wheat bread, and coconut oil instead of butter, and it was SO PERFECT.

I made one for my sister with white bread. She is totally picky but she even liked it!

Of course I forgot to take pictures but oh well.

Go make it, now.

It ended up looking a little less pretty….

It was still pretty tasty. I’m not too sure I’ll make it again, the tomato/egg combo was a bit strange to me.

 

I’ve been trying my best to incorporate more and more plant based foods into my diet. I came across some stuff about factory farming the other day. I can’t believe I am supporting that as well as all the negative environmental impacts! I’m not becoming “vegetarian” at this point, but I am trying to be more conscious of my meat consumption and try to see other plant based alternatives!

Last but not least, does anyone have any good ideas for a gift for graduates?? Smile

I almost deleted this because my stomach looks chubby. But then I remembered it’s just my mind playing tricks on me, and nobody is looking at my tummy anyways. They are looking at my face. Speaking of that, please excuse my teary face. It was a sad day!

Fabulous Friday

 

Happy FRIDAY!! Cheers to the weekend. Smile

My week has been all sorts of fabulous.

 

Fabulous is…. Long(er), speedier runs.

+1 mile warm up. (My garmin didn’t find the satellite very quickly, haha!)

+1.2 miles. My garmin really didn’t want to connect yesterday! Our first mile was super fast too, so our average pace was really closer to 10:10. I think that run really shows my improvement! It felt awesome. Smile

Fabulous is… This weather. Seriously, anything above freezing feels like a heat stroke. I just wore a long sleeve for running today, no jacket, and I got so hot I had to take off my head wrap and gloves off. This picture is a lie: It was actually really sunny today. I just forgot to snap a screenshot of the weather until now.

Look at those high numbers next week. I AM SO EXCITED.

Fabulous is… Quality time with Andrew.

Today I helped him practice for his solo competition tomorrow (he is going to do GREAT! he sounds wonderful!) and then we went out to our favorite little burger place. I ATE SOME OF HIS FRIES. AND A CHICKEN SANDWICH ON A BUN (!!) WITH PESTO (!!) and it was totally delicious and worth it. ED didn’t ruin our date night. Noopppeee.

Fabulous is… Spaghetti Squash & Quest bars. AKA my latest obsessions.

How do you make spaghetti squash? I’ve found the quickest, easiest way is to poke some holes in it, stick the whole thing in the microwave for about 8 minutes (flipping halfway through), and then scooping the guts out.

I like to bake my quest bars.

I think these are my two favorite flavors. Chocolate Chip Cookie Dough and Cookies & Cream. What can I say, I’m a cookie lover Winking smile

For those of you that bake them, what do you bake them on?? They always get stuck to the foil for me!

 

5. I’ve been experimenting with making my own protein bars for pre-run fuel. Protein bars can get expensive!

I think I’ve finally perfected the recipe. Winking smile

Not the prettiest, but tasty, I promise!

I modified this recipe from the amazing Sunnie who blogs over at Modern Girl Nutrition. Thank you for the inspiration, Sunnie!

Sugar Cookie Dough Protein Bars

Ingredients:

Old Fashioned Oats 1/4 cup dry – Ground up into a flour using a Food Processor

Rice Chex Cereal, 1 cup- Also ground up into a flour/ powder using a Food Processor

Protein Powder (I used Now Pea Protein – Vanilla Toffee)  2 scoops

Unsweetened Almond Milk, 1/4 Cup

Vanilla Extract, 1 Tsp

Cinnamon (to taste)

Organic Creamy Salted Peanut Butter, 5 Tbsp

Agave, 2 Tbsp

Stevia to taste

hint: make sure you use a delicious flavored protein powder!!

 

Directions:

Use a food processor to grind up your oats and Chex mix. Add the other ingredients and mix well. Hopefully it will form a dough-like consistancy. If it seems dry, add water or more almond milk until it forms a cookie dough consistency.

Flatten into a tupperware. Freeze for a few hours or overnight.

Cut into 6 bars. I then wrap the bars in tin foil and freeze them individually! I take them with me to school and they thaw by lunch. I eat them around 3.

Nutrition:

180 calories per bar, with 13 g Protein and 17 g Carbs

Enjoy. If you like cookie dough you will LOVE these. Feel free to tweak the recipe to your heart’s content!! Smile

Pumpkin Pie Lara Bar (recipe)

Just stopping by to share my new favorite fall recipe.

I love Lara bars. They taste like dessert and don’t cause my blood sugar to spike as fast as other snacks do. They are made of only a few whole, natural ingredients and are completely Paleo (gluten & dairy free!). There’s only one down side, the fun flavors are hard to find, and they can get expensive.

I looked a little on Pinterest and I found that Lara bars aren’t very difficult to make. You know what’s in them because it says right on the package! I was inspired to try my own flavor. 

I’m a pumpkin kind of girl, and with fall right around the corner, I decided to create Pumpkin Pie Lara bars.

Without further ado…

(makes ~6 lara bar sized bars)

-1/2 cup mixed nuts (almonds and cashews

-1.5 cups dates (pitted)

-2 tsp pumpkin spice

-1tsp vanilla

-1/2 Tablespoon coconut oil (softened) 

-sprinkle of (sea) salt.

Chop all nuts in the good processor. Add pitted dates and process. Add remaining ingredients and process. Spread in a small pan/Tupperware/Pyrex dish. Place in the fridge for 1 hour, then eat!
