Quick & Easy hummus: A recipe review

The other day I came across this recipe for hummus on Pinterest:

Best Ever 5 minute Microwave Hummus

Now I’ve always wanted to try making my own hummus. I was out of hummus, and TJ’s stopped selling my favorite kind- horseradish!- so I figured it was a perfect time to try out the recipe.

I used a tablespoon of squeezable organic garlic, and just 1 tablespoon of olive oil (the good stuff my dad brings back from Portugal!)

I had to buy Tahini from the grocery store with different cultural foods.

The author of the recipe writes that she could eat this stuff with a spoon. I agree. It’s totally perfect.

I made it in the blender, which was perfect because this made a LOT of hummus! It blended perfectly in like fifteen seconds.

I made it two days ago and it’s more than halfway gone. Mostly consumed by me. Trust me, this stuff is as good as the recipe suggests.

I can’t wait to try it again. I need to experiment with mix-ins now. Where can I find horseradish???

My favorite way of eating it? Power veggie sandwich.

Spread your hummus on Ezekiel bread.

Be very generous. Serving sizes do not apply to homemade items because YOU CHOOSE YOUR SERVING SIZE. Hehe.

Cut up and add your favorite veggies. The more colors, the better. My weapons of choice included fresh spinach, yellow bell pepper, and grape tomatoes. I suggest normal tomatoes because the grape guys will fall out of your sandwich. P.S. I suggest adding avocado as well. When I made this sandwich again, I added some and it made it 100000x better.

Happy FRIDAY!! Cheers to the weekend. Smile

My week has been all sorts of fabulous.


Fabulous is…. Long(er), speedier runs.

+1 mile warm up. (My garmin didn’t find the satellite very quickly, haha!)

+1.2 miles. My garmin really didn’t want to connect yesterday! Our first mile was super fast too, so our average pace was really closer to 10:10. I think that run really shows my improvement! It felt awesome. Smile

Fabulous is… This weather. Seriously, anything above freezing feels like a heat stroke. I just wore a long sleeve for running today, no jacket, and I got so hot I had to take off my head wrap and gloves off. This picture is a lie: It was actually really sunny today. I just forgot to snap a screenshot of the weather until now.

Look at those high numbers next week. I AM SO EXCITED.

Fabulous is… Quality time with Andrew.

Today I helped him practice for his solo competition tomorrow (he is going to do GREAT! he sounds wonderful!) and then we went out to our favorite little burger place. I ATE SOME OF HIS FRIES. AND A CHICKEN SANDWICH ON A BUN (!!) WITH PESTO (!!) and it was totally delicious and worth it. ED didn’t ruin our date night. Noopppeee.

Fabulous is… Spaghetti Squash & Quest bars. AKA my latest obsessions.

How do you make spaghetti squash? I’ve found the quickest, easiest way is to poke some holes in it, stick the whole thing in the microwave for about 8 minutes (flipping halfway through), and then scooping the guts out.

I like to bake my quest bars.

I think these are my two favorite flavors. Chocolate Chip Cookie Dough and Cookies & Cream. What can I say, I’m a cookie lover Winking smile

For those of you that bake them, what do you bake them on?? They always get stuck to the foil for me!


5. I’ve been experimenting with making my own protein bars for pre-run fuel. Protein bars can get expensive!

I think I’ve finally perfected the recipe. Winking smile

Not the prettiest, but tasty, I promise!

I modified this recipe from the amazing Sunnie who blogs over at Modern Girl Nutrition. Thank you for the inspiration, Sunnie!

Sugar Cookie Dough Protein Bars


Old Fashioned Oats 1/4 cup dry – Ground up into a flour using a Food Processor

Rice Chex Cereal, 1 cup- Also ground up into a flour/ powder using a Food Processor

Protein Powder (I used Now Pea Protein – Vanilla Toffee)  2 scoops

Unsweetened Almond Milk, 1/4 Cup

Vanilla Extract, 1 Tsp

Cinnamon (to taste)

Organic Creamy Salted Peanut Butter, 5 Tbsp

Agave, 2 Tbsp

Stevia to taste

hint: make sure you use a delicious flavored protein powder!!



Use a food processor to grind up your oats and Chex mix. Add the other ingredients and mix well. Hopefully it will form a dough-like consistancy. If it seems dry, add water or more almond milk until it forms a cookie dough consistency.

Flatten into a tupperware. Freeze for a few hours or overnight.

Cut into 6 bars. I then wrap the bars in tin foil and freeze them individually! I take them with me to school and they thaw by lunch. I eat them around 3.


180 calories per bar, with 13 g Protein and 17 g Carbs

Enjoy. If you like cookie dough you will LOVE these. Feel free to tweak the recipe to your heart’s content!! Smile

Healthy Eats Week Day 4: Snacks!

Happy Saturday! I’m excited for the weekend. First off, I have to apologise. This post was meant to be for Friday morning, but that didn’t happen. I was at CC team bonding day when suddenly my insulin pump stopped working. It did the same thing that happened in the bahamas! I was so angry. I spent my morning on the phone so they could ship me a new one and then figuring out giving shots for the day. Fun…

I wasn’t about to let that ruin my day though. I had something really exciting planned.

Extreme Trampolining!! I went with some of my middle school friends. It was so much fun!!

flips… definitely not me! (; my friend used to be a gymnast and is totally awesome.

Yesterday night my mom & sister & I finally found a couch! (My dad took our old one). Walking around furniture stores is so exhausting. It took forever. I never want to smell furniture again. Ever.

Time for Healthy Eats Week!  Here’s the fun stuff, guys. Get ready.It’s SNACK DAY!

Apple chips: Got the idea from a girl on the CC team. However, I burnt mine. Oops. The few un-burnt ones were delicious. The rest I couldn’t get off of the pan. Better luck next time (:

Peanut Butter Lover’s oatmeal cookies.  Yum! These were gone in like three days. I think I’ll have to add in more PB next time, but they were really soft and delicious. Thanks Katherine (:

These Emerald snack packs used to be one of my favorite snacks. Now, they aren’t unhealthy, but they certainly have more ingredients than they need. I decided to recreate the mix on my own. I got mini marshmallows and slivered almonds and unsalted peanuts and chocolate chips but the COCONUT! It was missing the coconut! I was so excited when I finally found these at TJ’s. Can’t wait to make my s’mores trail mix later today! (:

These aren’t a perfect snack, but they are much healthier than chips. A treat for me (:
My “need a quick snack that has carbs for on-the-go”. My favorite flavor ever.
Horsey Sauce at Arby’s, anybody?? This is my “clean” version of it!
I found it at TJ’s and I got so excited. I love eating it with carrots and peppers. It would be totally delicious on sandwiches and wraps, too.

I snack on nuts all the time. My ultimate favorite is TJ’s roasted cashews. Yummayyy.

Now, I have a confession to make. I am addicted to chewing gum. The Extra or the 5 kind? During the school year I may or may not have 6+ sticks in one day. That’s just the school day.

After reading some books on clean, healthy eating, I realized all the chemicals and additives in gum.. It really grossed me out.

These mints don’t have most of the dangerous stuff that gum has. They taste great too!

I don’t know about you, but I love food. I especially love healthy food because it makes my body feel good (That doesn’t mean I don’t eat ice cream. I eat loooots of ice cream.)

Hungry Girl Mac n Cheese

I found a Hungry Girl 1-2-3 cookbook on my shelf the other day, and I’ve been experimenting with new recipes. My favorite has been the Mac & Cheese. When I was little I loved the Kraft Mac & Cheese. I would probably eat 3-4 cups just for lunch (cringe!). Now, while I still know it is delicious, I am disgusted by the chemicals and the lack of nutrition. I used this recipe with cauliflower instead of broccoli. I love that it is so much more nutritious than the old Kraft stuff (: It tastes so much better too, much creamier and “real”!

Apricot Chicken- Probably the worst picture ever. Sorry guys! 😦

I found this recipe in the same Hungry Girl cookbook. If you haven’t checked out these cookbooks, you seriously should! Especially the 1-2-3. I love how easy the recipes are. I used real apricot preserves instead of the sugar-free kind, so the nutrition information was off, but I don’t care. It was good, but I don’t think I’ll be making it much. There are other chicken recipes I like a bit more, that make the chicken more tender.

Today I tried something that I found on pinterest called a Cucumber Salad.
It reminded me of Portuguese Salad that my dad used to make. I have no idea if that’s actually a thing or just what my family called it… It was tomatoes and onions and olive oil put together and kept in the fridge.

I had a cucumber that was getting pretty dry, so I cut that up, cut up some mini tomatoes (from the farmer’s market!) and chopped up an onion. Then I used some light dressing we had in the fridge, a bit of olive oil for healthy fat, and voila!

This may be my new favorite food. 

When you put my favorite veggies in a fancy salad, I get excited. I love this stuff. And how easy is it to make??

I keep it in the fridge because it’s like 90 degrees outside and well, I like cold things.

Last food…


I think I’m obsessed with this stuff. A CUP FOR 39 CALORIES yes please. I have no idea if this is healthy at all but it’s not the worst thing I could eat and it’s absolutely delicious. Just the perfect amount of salt (a very little bit). Yum yum yum.

I said that was the last FOOD, no promises on drinks (;

Have you tried almond milk before?? I haven’t, but I really like this stuff! I prefer the taste over plain milk. I think it’s better for you in some ways? I had intentions to make Overnight Oats or recipes and stuff but it hasn’t happened yet. Will do.

Today I decided to stop being cheap and finally buy some protein powder. After reading some reviews, I settled on Tera’s Vanilla Whey powder. I spent all day trying to get Drugstore.com to let me use a coupon, and then gave up, and found Natural Healthy Concepts. I have never ordered from them before, so hopefully this goes well! I was able to get quite a deal with free shipping from them.

I really hope I’ll like this!

Please forgive me if this happens tonight. I found it on Pinterest and I know I’m gonna need to try it…. I’ll let you know if it’s good (;

Lazy Monday.

Happy Memorial Day! I hope everyone is enjoying their day off. Let’s not forget to honor those who served our country.

Yesterday, I had a 5 mile run on the training plan. I was not in the mood! My boyfriend, Andrew, was supposed to meet me for 3 of the miles but he backed out. 😦

However, I got my butt up and went for it anyways. And guess what? It was great!!

After 5, I was feeling great, so I decided to throw in another mile. Doing 6 miles by myself  wasn’t so much physically challenging, since I was going very slow. (yeah, 11:45/mile average pace..) It was mentally challenging! I had to keep motivating myself. I am so glad I did it though.

When I got home, I realized I should have done another .19 miles so it would have counted as a 10k 😦 Oh well. It was  PR nonetheless!

I was SO HUNGRY for the rest of the day. I don’t know if I have ever been that hungry in  my life! Oh well. I think I earned it (;

Homemade granola bars! These things are THE BEST!!

I had tried out a recipe from Sally’s baking addiction. Try it now. It is seriously the most amazing thing you will ever taste! I edited it a bit, adding peanuts instead of cranberries and raisins. It was super-duper easy. Took like 10 minutes. These things are the best, I’m telling you, go make them now.

Now today is rest day. Today I do laundry and study (FINALS FINALS AH). I need to remember a semester worth of spanish.. I barely remember what I ate for breakfast yesterday. Wish me luck! (;
